Coral Hedgehog is a species of mushroom that is also known by its Latin name Hericium Erinaceus. It can be recognised by its tasselled hat with white hanging needles. It usually grows on the decaying wood of fallen deciduous trees in Europe, East Asia and North America.

Although less well known here,it has long been valued in China - where it is used both in nutrition and in herbal tradition, where it is also called "wise mushroom" or "food for the brain" for its beneficial effects.

Because it is an edible mushroom, it is used in a variety of dishes in the kitchen and is often found on the menus of people with plant-based diets because of its lobster-like flavor and meaty texture.
